Cilantro Salad Dressing

 

2 cups of Almond Yogurt (could also try Cashew Cheese)

Juice from one lemon

1 avocado

1 bunch of cilantro (can use basil as well, no stems)

Salt to taste

Jalapeño or cayenne pepper to taste

Water, enough to blend

 

Mix all in a blender (the high-speed Vitamix® blender works perfectly). Refrigerate.

 

Makes approximately 4 cups
