Blueberry Yogurt

 

1¾ cups Almond Yogurt or Cashew Yogurt*

16 ounces or so (by weight) blueberries

18-30 dates

Seeds from one vanilla bean

Blend well (the high-speed Vitamix® blender works perfectly). Chill.

* Using Cashew Yogurt results in a slightly smoother, creamier yogurt.

Makes approximately 3 cups
