Creamy Coriander Salad Dressing

• 2 avocados

  1 tsp. coriander

  Juice from about ¼ of a lemon

  ½ tsp. salt

  ¼ cup water (more or less to achieve desired thickness)

Stir, blend, or food process all ingredients until smooth.

As avocados vary in size, adjustments in the other ingredients may be necessary to result in a pleasing flavor: seasoned well, a slight lemon tanginess, and salty enough.

Caesar Salad Dressing

Using the Creamy Coriander Salad Dressing, reduce the avocado volume by about 1/3 and add that amount of Cashew Cheese. Add ground pepper if desired.

Makes approximately 1½ cups
