Crunchy Guacamole

4 avocados

2 stalks of celery, diced

1/3 cup red onion, diced

Kernels cut from 2 cobs of corn

1-2 tbsp. pine nuts

Powdered ginger or shredded fresh ginger, to taste

Sea salt to taste

 

Stir all ingredients and serve.

 

Makes approximately 3 cups
